how i miss this … working in the kitchen under completely dense time frames … being absorbed in the actions with the time … concentrated … absorbed in each plate leaving the kitchen towards the guest … with salad painted onto … or a dessert just at the point of melting or cooling down … soufflée on its point … i love this.
